Jamón Serrano is original, aging, Spanish ham made from the meat of a popular white breed of pigs. The name "jamón serrano" is determined by the traditional method of its production. This particularly refers to the aging of the hind leg in the characteristic raw, dry climate of the Iberian Peninsula's meseta. This process takes place there, in mountainous conditions, at low temperatures, for at least 9 months. It allows for the extraction of the maximum flavor from the meat.
