Squid have a slightly rubbery, delicate meat with a sweet-sea flavor. Squid should be deep-fried, stewed, baked, or cooked into soup. Appetizing rings can be served drizzled with sauce, with salad, or even as tripe. Ideally prepared squid should be crispy on the outside and soft on the inside. The success of fried and cooked squid lies in the cooking time. They can be fried and boiled very briefly over high heat or very slowly over low heat. Squid cannot be cooked to "medium" because then they become rubbery. They are most often served with butter and garlic, placed back in their shells or as an ingredient in other dishes.
