This Chablis from Domaine Michaut is produced from grapes harvested in northern Burgundy, near the town of Auxerre, close to the Serein River. This area is exceptional for growing Chardonnay and is world-renowned for its Kimmeridgian limestone soil, consisting mainly of chalky marl and small oyster shells embedded in the rocks. The vinification is traditional, with fermentation in stainless steel tanks and short aging on the lees. The wine presents a wonderful straw-yellow color. A rich aromatic range, with notes of white-fleshed fruits intermingling with subtle minerality. The palate is fresh and balanced, with a pleasantly citrus finish. Ideal for sushi, oysters, and fresh cheeses.
