High-quality, thin, extremely delicate yet elastic and delicious Soba noodles are one of the basic ingredients of Japanese cuisine. Made from wheat and buckwheat flour (in a ratio of ~80/20) with the addition of wild yam (YAM) and salt. The high buckwheat content makes the noodles aromatic and gives them an interesting texture. Yam – besides its health benefits – binds and adds elasticity to the product. Generally, it does not need to be salted. It cooks very quickly (5 - 7 min.).
