Straw mushrooms grow on a substrate of rice straw, hence their name. They are harvested while still immature, which makes their flesh tender and slightly sweet. During processing, the highest standards are maintained. They are very well-known and widely used in Asian cuisine, especially as an addition to soups, such as in the popular Thai coconut soup Tom Ka, in wok dishes, as a side dish, an addition to noodles, or in salads.
