Squid has a slightly rubbery, delicate sweet-sea flavor. Squid should be fried in deep fat, stewed, baked, or cooked into soup. Appetizing rings can be served drizzled with sauce, with salad, or even as tripe. Ideally prepared squid should be crispy on the outside and soft on the inside. The success of fried and boiled squid lies in the cooking time. They can be fried and boiled very briefly over high heat or very slowly over low heat. Squid cannot be prepared 'medium,' as they then become rubbery. They are most often served with butter and garlic, placed back in their shells or as an ingredient in other dishes.
