Ginger sliced into thin pieces, marinated in a sweet vinegar solution. Produced in two varieties: white (natural) and pink (colored). Both are popular additions to sushi, consumed between bites to cleanse the palate - hence the name Sushi Gari, meaning ginger for sushi. The coloring is meant to enhance the aesthetic qualities of ginger but is often a sweeter version, hence it is sometimes called amazu shoga, meaning sweet ginger.
