Pickled ginger Amazu Shoga 250g/12

Ginger sliced thinly, pickled in a sweet vinegar brine. Produced in two varieties: white (natural) and pink (dyed). Both are popular accompaniments to sushi, consumed between bites to cleanse the palate – hence the name Sushi Gari, meaning ginger for sushi. The dyeing enhances the aesthetic qualities of the ginger. Recently, European regulations allow ginger to be dyed only with natural colorants. Not all producers can do this well – the colorants used are unstable, degrade, and the color becomes gray, blue, or orange-tinted.
