Cassava starch is a starch flour obtained from the tubers of the cassava plant. Cassava originates from Brazil, where its cultivation began 3000 years BC by Portuguese and Spanish explorers, and is now grown worldwide. Interestingly, due to its significant economic importance, it ranks seventh, just after grains and potatoes. Cassava has thus become the equivalent of our potato in temperate climate zones. Starch obtained from cassava is hypoallergenic, devoid of taste and smell. The root tubers contain approximately 30% starch, up to 5% carbohydrates, up to 2% proteins, up to 0.3% fats, and some vitamins such as B1, B2, B3, and C. This product contains no gluten.
