Haruka rice is the highest quality, traditional, short-grain Japanese rice. In Japan, short-grain rice is practically the only type used for making sushi, while in Europe, medium-grain rice is preferred. Ideal sushi rice in original Japanese style. When cooking, use 1 cup of rice to 1 1/4 cups of water and after boiling, cook covered for only 10 minutes, then keep covered for another 10 minutes.
