Gorgonzola Cheese DOP Primavera Oioli

Gorgonzola – a rennet cheese, soft, ripening, blue mold cheese originating from northern Italy, from the Lombardy region. Its name comes
from the town of Gorgonzola, where it has been produced since 879. It is made from cow's milk and is marbled with greenish
and blue mold veins of Penicillium glaucum.

Types of gorgonzola:
bianco – cheese before mold growth
dolce – sweet, soft, and creamy, with less mold, less mature (50 days of aging)
piccante – spicy, drier than the previous one and slightly harder, with more mold, more mature (80 days of aging)
cream – made using milk with added cream.

Interesting facts: it is one of the oldest cheeses
the mold covering gorgonzola enhances the flavor of cheeses such as French roquefort or English stilton
