Oyster Fish Sauce is a condiment used in the cuisine of Eastern countries. It is one of the most important additives used there, alongside soy sauce. It is made from fermented fish, salt, and water. The best sauces are made from five species of fish, including gourami. Raw fish with salt is fermented in barrels under the sun until it becomes liquid. The collected extract is clarified and bottled. It has a characteristic smell and taste, somewhat similar but much more intense than salted herring. It is slightly sweet because sugar is added during the fermentation process.
