During the ripening period, olives acquire a range of different shades (veraison), from green to yellow, purple to nearly black, which is when the flesh becomes soft. This is a very slow process, especially when sunlight is weak. During the last stage of ripening, the flesh shrinks and loses weight. Olives must be harvested after complete ripening and after reaching the appropriate level of oiliness, antioxidants, and better organoleptic properties (for typical products, better in phases 2 and 3). The olive harvest period in central Italy usually takes place between November and December, when olives reach maximum size, highest oil content, and when the flesh partially loses its consistency.
