Original Dutch matjes herring is a higher quality product, prepared more traditionally. The name comes from the Dutch word maagd, which means girl, virgin. Matjes is a one-year-old herring, before its first spawning. Dutch herring is small, about 15 cm long, fatty, and salted quite differently than ours - according to a medieval recipe.
