Product made from deboned thighs, selected for weight, fat content, and meat quality. After deboning, the hams are injected with a multi-needle injector, tenderized, and finally pressed. They are then vacuum packed and placed in molds with a capacity of about 8.5-9.5 kg. Cooking takes place in steam ovens until the internal temperature exceeds 69 °C. After cooking, the product is packed and then pasteurized.
