Of excellent quality, sugar snap peas retain their natural color and aroma after thawing. The edible part of sugar snap peas includes both the seeds and the entire pods. This allows us to enjoy not only fresh, juicy seeds but also the crunchy skin. They are sown in early spring and harvested when the pods are fully grown, and the seeds are just forming. Sugar snap peas can be a standalone snack, eaten raw. They can also be steamed or boiled until al dente or soft, and stir-fried. Before consumption, the pods should be thoroughly washed and the tough ends trimmed. To preserve their intense color, a little vinegar or citric acid can be added to the boiling peas.
