Kombucha is another name for the tea fungus also known as Japanese mushroom. It is a colony of bacteria and yeast, from which, through fermentation, a lightly sparkling, sweet-sour drink is produced. The base of the drink is sweet tea, which ferments for about 14 days, and the bacteria and yeast digesting the sugar convert it into organic acids, vitamins, enzymes, and carbon dioxide, which in turn causes a slight fizz.

Kombucha has been known for over 2000 years and originates from eastern China. Legend has it that the name of the drink comes from the Korean physician Kombu, who healed the Emperor of Japan with fermented tea. Thanks to natural fermentation, kombucha is rich in vitamins and probiotics. It contributes to improved digestion, increased immunity, and restoring natural balance in the body.

Kombucha with oak and elderflower is a truly exquisite taste. Elderflower has a spicy aromatic profile. It is a floral-fruity aroma like pineapple, melon, and cantaloupe combined with a refreshing herbal note and of course elderflower.
